Valentina C. Stefanou is a Chemist from National Kapodistrian University of Athens, and she has Master Degree from the same University and PhD from the National Technical University of Athens. She is working as a Scientific Associate at the Laboratories of Biochemistry, Food Chemistry and Sensory Analysis of the Department of Food Science and Technology, University of West Attica and has 14 peer reviewed scientific publications in international scientific journals and over 25 poster presentations in international and Hellenic scientific conferences. She has worked on synthesis of compounds with biological activity and supramolecules and her current interest is on the medicinal properties of herbals and functional food, the use of their extracts and isolated constituents as alternative medicines and also their antioxidant activity evaluation.
