Statilko Olga graduated at the top of her class from the Department of Agricultural Technology, University of Thessaly, specializing in Plant Production. During her undergraduate studies, she participated in the research project ‘Innovation Challenge – Sustainable Ice Cream’ by Unilever, during which her research team was recognized and awarded one of the three available prizes, ‘Proactive Co-Creation in Sustainable Ice Cream Challenge’. She then pursued a Master’s degree in ‘Food Innovation, Quality and Safety’ during the academic years 2022-2024, earning an excellence award. Her master’s dissertation was titled ‘A comparative study on phytochemical composition and antioxidant activity of plant of the Brassicaceae (Cruciferae) family’. Her research interests focus on the identification and analysis of phytochemicals in food products, the development and validation of analytical methods, as well as optimization of extraction techniques with the use of experimental design. She is a PhD candidate at the Department of Food Science and Technology, University of West Attica, under the supervision of Dr. Irini Strati. Her thesis is titled ‘Study of chemical composition and extraction of phytochemical compounds from cruciferous vegetables and their valorization for functional food development’
