Dr. Athina Ntzimani is a graduate of the Department of Chemistry of the University of Ioannina (2003). In 2006, she completed her master’s degree in Food Science and Nutrition, with a thesis entitled “Study of the Effect of Packaging on the Shelf Life of Smoked Turkey Fillets” and in 2011 earned her PhD diploma, entitled “Study of the effect of natural antimicrobial agents on the preservation and safety of semi-cooked poultry meat” from the Department of Chemistry of the University of Ioannina (2011).

She possesses extensive experience in fields related to food packaging (edible films with antimicrobial and antioxidant activity, modified atmosphere packaging), as well as in studying their applications in foods. Her research interests also include food microbiology and safety, microbial growth/inactivation kinetics, the antimicrobial action of natural compounds, the valorization of plant- and animal-based by-products, as well as the extraction and application of bioactive compounds in foods and packaging systems, the bioaccessibility of bioactive compounds, innovative preservation methods, sensory evaluation, and shelf life determination.

She has participated in numerous national and European research projects, as well as in collaborative programs with major Greek food industries, successfully correlating packaging, processing, and storage conditions of foods with their microbiological, physicochemical, and sensory parameters. She has demonstrated continuous research and teaching activity at the Laboratory of Food Chemistry and Technology, School of Chemical Engineering, National Technical University of Athens (NTUA), for the past 10 years and has worked as an Academic Fellow- Teaching Laboratory Courses at the Technological Educational Institute (TEI) of Larissa, in the Departments of Food Technology and Nutrition & Dietetics, teaching courses related to Food Preservation, Processing, and Microbiology. For the past 20 years, she has been supervising numerous diploma and postgraduate theses at the University of Ioannina and the National Technical University of Athens.

Her research output includes 25 publications in international peer-reviewed journals, 1 book chapter, and more than 40 conference presentations, accumulating 988 citations and an h-index of 13 (Scopus, 2025). Additionally, she serves as a reviewer for international scientific journals (Foods, Agriculture, Molecules) and acts as Guest Editor for Foods, in special issues focusing on innovations in food microbiology, food preservation, food processing, and food packaging.
